Spring Pasta with Salmon, Peas, and Dill

Spring pasta with salmon, peas, and dill is a light and refreshing dish that celebrates the flavors of the season. It combines the richness of salmon with the sweetness of peas and the fresh taste of dill, creating a delightful and nutritious pasta meal. Here's a simple recipe to make this flavorful dish:

Ingredients:

  • 8 ounces (225g) pasta of your choice (linguine, fettuccine, or penne work well)
  • 8 ounces (225g) salmon fillet, skinless and boneless
  • 1 cup fresh or frozen peas (if using frozen, thaw them first)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain the pasta and set it aside.

  2. While the pasta is cooking, season the salmon fillet with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

  3. Add the salmon fillet to the skillet and cook for 3-4 minutes per side until it's cooked through and flakes easily with a fork. Remove the salmon from the skillet and let it rest for a moment. Once rested, break it into bite-sized pieces using a fork.

  4. In the same skillet, add another tablespoon of olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.

  5. Stir in the fresh or thawed peas and cook for 2-3 minutes until they are tender.

  6. Add the cooked pasta to the skillet with peas and garlic. Toss everything together to combine.

  7. Add the lemon zest, lemon juice, and chopped fresh dill to the pasta. Toss again to distribute the flavors.

  8. Gently fold in the cooked salmon pieces, being careful not to break them too much.

  9. Season the spring pasta with salt and pepper to taste. If you like, you can sprinkle some grated Parmesan cheese on top for added richness.

  10. Serve the spring pasta with salmon, peas, and dill immediately, and enjoy your fresh and delicious meal!

This dish is not only quick and easy to make, but it also showcases the vibrant colors and flavors of spring. It's perfect for a light lunch or dinner that's sure to impress your family or guests
