Smothered Pork Chops

Ingredients:
- 4 bone-in pork chops (about 1 inch thick)
- Salt and black pepper to taste
- 1/2 cup all-purpose flour
- 2 tablespoons vegetable oil
- 2 tablespoons unsalted butter
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/4 teaspoon cayenne pepper (optional, for a hint of heat)
- Fresh parsley, chopped, for garnish (optional)
Instructions:
Season the pork chops with salt and black pepper on both sides.
Dredge the pork chops in flour, shaking off any excess.
In a large skillet or frying pan, heat the vegetable oil over medium-high heat.
Add the pork chops to the hot oil and sear them for about 3-4 minutes on each side until they are nicely browned. Remove the pork chops from the skillet and set them aside.
In the same skillet, melt the butter over medium heat.
Add the thinly sliced onions to the skillet and sauté until they become soft and translucent.
Stir in the minced garlic and cook for another minute until it becomes fragrant.
Pour in the chicken broth, scraping the bottom of the skillet to deglaze it and incorporate all the flavorful browned bits.
Bring the mixture to a simmer and let it cook for a few minutes until it reduces slightly.
Stir in the heavy cream, dried thyme, dried sage, and cayenne pepper (if using). Let the gravy simmer for a few more minutes until it thickens.
Add the seared pork chops back to the skillet, making sure to submerge them in the gravy.
Lower the heat to medium-low, cover the skillet with a lid, and let the pork chops cook in the gravy for about 15-20 minutes until they are fully cooked and tender.
Optionally, garnish the smothered pork chops with chopped fresh parsley for added freshness.
