Lasagna Soup
Lasagna soup is a delicious and hearty soup that incorporates the flavors of traditional lasagna into a comforting and easy-to-make dish. Ingredients:
- 1 lb ground beef or Italian sausage (you can use a combination of both)
- 1 onion, chopped
- 3-4 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 (28 oz) can crushed tomatoes
- 1 (14 oz) can diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon crushed red pepper flakes (optional, for added heat)
- 2 bay leaves
- 8-10 lasagna noodles, broken into small pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- Salt and pepper to taste
- Fresh basil leaves, for garnish
Instructions:
In a large pot or Dutch oven, cook the ground beef or Italian sausage over medium-high heat until browned. If there's excess fat, drain it, leaving a small amount for flavor.
Add the chopped onion and minced garlic to the pot with the meat and cook for a few minutes until the onions are softened.
Stir in the beef or vegetable broth, crushed tomatoes, diced tomatoes, tomato paste, oregano, basil, thyme, crushed red pepper flakes (if using), and bay leaves. Bring the mixture to a boil.
Reduce the heat to medium-low, cover the pot, and let it simmer for about 20-25 minutes to allow the flavors to meld together.
Meanwhile, cook the lasagna noodles according to the package instructions until they're al dente. Drain and set aside.
Once the soup has simmered, add the broken lasagna noodles to the pot and cook for an additional 10-12 minutes or until the noodles are fully cooked.
Season the soup with salt and pepper to taste. Remove the bay leaves.
To serve, ladle the soup into individual bowls. Top each serving with shredded mozzarella, grated Parmesan, and a dollop of ricotta cheese.
Garnish with fresh basil leaves before serving to add a burst of color and flavor.
