Ingredients:
- 8 oz (225g) fettuccini pasta
- 2 salmon fillets (about 6-8 oz each), skinless and boneless

- 2 tablespoons olive oil, divided
- 1 tablespoon butter
- 2 cloves garlic, minced
- 4 cups fresh baby spinach leaves (washed and dried)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Lemon zest (from one lemon)
- Fresh lemon juice (from half a lemon)
- Fresh parsley, chopped, for garnish (optional)
Instructions:
Cook the fettuccini pasta according to the package instructions until it's al dente. Drain the pasta and set it aside.
Season the salmon fillets with salt and pepper on both sides.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon fillets to the skillet and cook them for about 3-4 minutes per side, or until they are cooked through and flake easily with a fork. Once cooked, remove the salmon from the skillet and set it aside.
