Migas with chorizo is a delicious Spanish dish that combines crispy fried bread with flavorful chorizo sausage and other ingredients like garlic, peppers, and onions. It's a hearty and comforting meal, perfect for breakfast or brunch. Here's a simple recipe to make migas with chorizo:

Ingredients:

  • 4 cups stale bread, torn or cut into small pieces (preferably day-old crusty bread)
  • 4 oz (about 120g) chorizo sausage, sliced or chopped
  • 1/2 onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons tomato sauce or crushed tomatoes
  • 1 teaspoon smoked paprika (or regular paprika if unavailable)
  • Salt and pepper to taste
  • 4-6 large eggs
  • Fresh parsley, chopped, for garnish (optional)
  • Crumbled feta or grated cheese for topping (optional)

Instructions:

  1. In a large skillet or frying pan, heat 2 tablespoons of olive oil over medium heat.


  2. Add the chopped chorizo to the pan and cook it until it releases its oils and becomes slightly crispy. Remove the chorizo from the pan and set it aside.


  3. In the same pan, add the remaining tablespoon of olive oil and toss in the chopped onion, diced red bell pepper, and minced garlic. Sauté them until they become softened and slightly caramelized.


  4. Stir in the tomato sauce (or crushed tomatoes) and smoked paprika, and season with salt and pepper to taste. Cook for an additional minute to let the flavors meld together.


  5. Add the torn or cut pieces of stale bread to the pan and mix them with the chorizo and vegetables until well combined.


  6. Allow the bread to fry in the pan, stirring occasionally, until it becomes crispy and toasted. This should take about 5-7 minutes.


  7. While the bread is frying, you can prepare the eggs. You can either fry them in a separate pan or make wells in the bread mixture and crack the eggs directly into the wells. Cover the pan and cook until the eggs reach your desired doneness (runny or fully cooked).


  8. Once the eggs are cooked, sprinkle the migas with chorizo with chopped fresh parsley and crumbled feta or grated cheese (if using) for added flavor and presentation.
