Gnocchi with Creamed Spinach
Gnocchi with creamed spinach is a delectable and comforting Italian dish that combines soft potato dumplings with a creamy, savory spinach sauce. Here's a simple recipe to guide you through making this delicious meal:
Ingredients:
- 1 pound (450g) store-bought or homemade gnocchi
- 4 cups fresh baby spinach leaves (washed and dried)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for a lighter version)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Pinch of nutmeg (optional)
- Grated Parmesan cheese and chopped fresh parsley for garnish (optional)
Instructions:
Cook the gnocchi according to the package instructions or prepare homemade gnocchi from scratch. If using store-bought, they usually cook quickly, taking only a few minutes in boiling water until they float to the surface. For homemade, they might take a little longer, so keep an eye on them. Once cooked, drain and set aside.
In a large skillet or pan, heat the butter and olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
Add the fresh baby spinach to the pan and cook until it wilts down. This should only take a couple of minutes.
Pour in the heavy cream (or half-and-half) and bring the mixture to a gentle simmer. Let it cook for a few minutes until the cream thickens slightly.
Stir in the grated Parmesan cheese and season with salt and pepper to taste. If desired, add a pinch of nutmeg to enhance the flavors.
Add the cooked gnocchi to the creamed spinach sauce in the pan. Gently toss everything together until the gnocchi is well coated in the creamy sauce.
Cook for an additional minute or two, allowing the gnocchi to absorb some of the sauce.
Remove the pan from the heat, and if you prefer a thinner sauce, you can add a splash of pasta cooking water or milk to achieve the desired consistency.
Serve the gnocchi with creamed spinach in individual plates or bowls. Optionally, garnish with additional grated Parmesan cheese and chopped fresh parsley.
This dish makes for a delightful and satisfying meal. The creamy spinach sauce complements the soft and pillowy gnocchi perfectly, making it a wonderful option for lunch or dinner. Enjoy
