Vegan Meatballs
Vegan meatballs are a flavorful and hearty alternative to traditional meat-based meatballs. They are made using plant-based ingredients, often featuring beans, grains, and various herbs and spices. Here's a delicious and easy recipe for vegan meatballs:
Ingredients:
- 1 can (15 oz) chickpeas or black beans, drained and rinsed
- 1/2 cup cooked quinoa or cooked brown rice
- 1/2 cup rolled oats
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
- 2 tablespoons tomato paste or ketchup
- 1 tablespoon soy sauce or tamari
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley or basil
- 1-2 tablespoons olive oil (for cooking)
Instructions:
- In a food processor, combine the chickpeas (or black beans), cooked quinoa (or brown rice), rolled oats, chopped onion, minced garlic, nutritional yeast (if using), tomato paste (or ketchup), soy sauce (or tamari), ground cumin, dried oregano, paprika, salt, and pepper.
- Pulse the ingredients until well combined but still slightly chunky. You don't want a completely smooth mixture; some texture is desirable.
- Transfer the mixture to a mixing bowl and stir in the chopped fresh parsley or basil.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using your hands, shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.
- Brush the meatballs lightly with olive oil to help them brown and crisp up in the oven.
- Bake the vegan meatballs in the preheated oven for about 20-25 minutes or until they are firm and lightly browned on the outside.
- Once cooked, you can serve the vegan meatballs with your favorite pasta sauce, on top of spaghetti, or in a sub sandwich with marinara sauce. They are also delicious as an appetizer or served with a side salad.
Feel free to customize the vegan meatballs with different herbs and spices to suit your taste preferences. You can also add grated carrots, zucchini, or other vegetables for extra flavor and nutrition. These vegan meatballs are not only satisfying but also a great way to incorporate more plant-based protein into your meals. Enjoy
