Teriyaki Salmon with Crispy Roasted Broccoli is a delicious and healthy dish that combines the rich flavors of teriyaki-glazed salmon with the nutty and crispy goodness of roasted broccoli. It's a simple and satisfying meal that's perfect for any day of the week. Here's how to make it:
Ingredients:
For the Teriyaki Salmon:
- 4 salmon fillets (about 6 ounces each)
- 1/4 cup soy sauce (or tamari for a gluten-free option)
- 1/4 cup water
- 2 tablespoons honey (or brown sugar)
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch (or arrowroot powder) mixed with 2 tablespoons water (to thicken the sauce)
- Sesame seeds and sliced green onions (for garnish, optional)
For the Crispy Roasted Broccoli:
- 1 large head of broccoli, cut into florets
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
For the Teriyaki Salmon:
In a small saucepan, combine the soy sauce, water, honey (or brown sugar), rice vinegar, sesame oil, minced garlic, and grated ginger. Heat the mixture over medium heat and let it come to a simmer.
In a separate small bowl, mix the cornstarch (or arrowroot powder) with water to create a slurry. Slowly pour the slurry into the simmering sauce while stirring continuously. Continue to cook the sauce for another minute or two until it thickens to your desired consistency. The sauce should be glossy and slightly thickened.
Remove the sauce from the heat and let it cool slightly.
Pat the salmon fillets dry with a paper towel and place them in a shallow dish or a ziplock bag. Pour half of the teriyaki sauce over the salmon fillets, making sure they are well coated. Reserve the other half of the sauce for serving.
Marinate the salmon in the sauce for at least 20 minutes (or longer if time allows) to allow the flavors to infuse.
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
For the Crispy Roasted Broccoli:
In a large mixing bowl, toss the broccoli florets with olive oil, salt, and pepper until they are well coated.
Spread the broccoli out in a single layer on the prepared baking sheet.
Roast the broccoli in the preheated oven for about 15-20 minutes, or until it becomes tender and slightly crispy at the edges.
For assembling the dish:
While the broccoli is roasting, heat a non-stick skillet or a grill pan over medium-high heat.
Once the pan is hot, add the marinated salmon fillets, skin-side down. Cook the salmon for about 4-5 minutes per side, depending on the thickness of the fillets, or until it's cooked to your desired level of doneness.
Remove the salmon from the pan and drizzle some of the reserved teriyaki sauce over the top.
Serve the Teriyaki Salmon with Crispy Roasted Broccoli on a plate. Garnish with sesame seeds and sliced green onions, if desired.
Enjoy this delightful Teriyaki Salmon with Crispy Roasted Broccoli, and savor the harmonious blend of flavors and textures in this delicious and nutritious dish
