Ingredients:

  • 8 ounces rice noodles (Pad Thai noodles)

  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons tamarind paste (or lime juice)
  • 2 tablespoons brown sugar (or palm sugar)
  • 1 teaspoon chili flakes (adjust to your spice preference)
  • 2 large eggs, lightly beaten
  • 1 cup bean sprouts
  • 4 green onions (scallions), sliced
  • 1/4 cup chopped peanuts
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. Cook the rice noodles according to the package instructions until they are al dente. Drain the noodles and set them aside.


  2. In a small bowl, prepare the Pad Thai sauce by mixing together fish sauce, oyster sauce, soy sauce, tamarind paste (or lime juice), brown sugar, and chili flakes. Adjust the seasonings to your taste preference.


  3. Heat the vegetable oil in a large skillet or wok over medium-high heat.


  4. Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant.
