Stuffed Sweet Potatoes
Stuffed sweet potatoes are a delicious and nutritious dish that can be served as a satisfying main course or a hearty side dish. Sweet potatoes have a natural sweetness that pairs well with various savory and flavorful fillings. Here's a basic recipe for making stuffed sweet potatoes:

Ingredients:

  • 4 medium-sized sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa (or any other grain of your choice)
  • 1 cup cooked black beans (or any other cooked beans)
  • 1 cup chopped vegetables (e.g., bell peppers, zucchini, spinach, kale, etc.)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder (adjust to your preferred spiciness)
  • Salt and black pepper to taste
  • Optional toppings: avocado slices, chopped cilantro, shredded cheese or vegan cheese, Greek yogurt or sour cream (for a non-vegan option), etc.

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. Wash the sweet potatoes thoroughly and pat them dry with a paper towel.

  3. Pierce each sweet potato several times with a fork or a sharp knife. This allows steam to escape while baking.

  4. Place the sweet potatoes on a baking sheet lined with parchment paper or aluminum foil.

  5. Bake the sweet potatoes in the preheated oven for about 45-60 minutes or until they are tender and cooked through. The baking time will depend on the size and thickness of the sweet potatoes.

  6. While the sweet potatoes are baking, prepare the filling. In a skillet, heat the olive oil over medium heat.

  7. Add the chopped onion to the skillet and sauté until it becomes translucent.

  8. Add the minced garlic to the skillet and cook for another minute until fragrant.

  9. Stir in the cooked quinoa, cooked black beans, and chopped vegetables.

  10. Season the filling with ground cumin, chili powder, salt, and black pepper. Mix everything together until well combined and heated through.

  11. Once the sweet potatoes are baked and tender, remove them from the oven.

  12. Slice each sweet potato open lengthwise, and gently fluff the insides with a fork.

  13. Stuff each sweet potato with the prepared filling.

  14. Optionally, you can add additional toppings such as avocado slices, chopped cilantro, shredded cheese or vegan cheese, Greek yogurt or sour cream (for a non-vegan option), or any other toppings you like.

  15. Serve the stuffed sweet potatoes while they are still hot and enjoy this delicious and wholesome meal!

Stuffed sweet potatoes are a versatile and customizable dish. You can get creative with the filling and toppings, making it a perfect option for a quick and flavorful weeknight dinner or a delicious lunch. Enjoy your stuffed sweet potatoes
