Ingredients:

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound (450g) ground meat (such as beef, turkey, chicken, or plant-based meat for a vegetarian option)
  • 1 cup cooked rice (white, brown, or any other grain of your choice)
  • 1 can (15 oz) diced tomatoes (or tomato sauce)
  • 1 cup cooked beans (e.g., black beans, kidney beans, etc.) (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste
  • Shredded cheese (such as cheddar, mozzarella, or vegan cheese for a non-dairy option) (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes from the inside. Rinse the peppers thoroughly.


  3. In a skillet, heat the olive oil over medium heat.


  4. Add the chopped onion to the skillet and sauté until it becomes translucent.


  5. Add the minced garlic to the skillet and cook for another minute until fragrant.


  6. If using meat, add the ground meat to the skillet and cook until it's fully cooked and no longer pink. If using plant-based meat, cook it according to the package instructions.


  7. Stir in the cooked rice, diced tomatoes (or tomato sauce), and cooked beans (if using) to the skillet.


  8. Season the filling with dried oregano, dried basil, salt, and black pepper. Mix everything together until well combined and heated through.


  9. Taste the filling and adjust the seasonings to your preference.


  10. Stuff each bell pepper with the prepared filling until they are filled to the top.


  11. Optionally, top each stuffed pepper with shredded cheese for added flavor.


  12. Place the stuffed peppers in a baking dish or on a baking sheet lined with foil.


  13. Cover the baking dish with foil, creating a tent-like shape to allow the peppers to steam and cook.


  14. Bake the stuffed peppers in the preheated oven for about 25-30 minutes or until the peppers are tender and cooked through.


  15. If using cheese, remove the foil covering during the last 5 minutes of baking to allow the cheese to melt and become bubbly.


  16. Once the stuffed peppers are done baking, remove them from the oven and let them cool for a few minutes before serving.
