- 1 cup sour cream
- 2 cups shredded Monterey Jack cheese (or a blend of your favorite cheeses)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 1 small red bell pepper, diced
- 1 small jalapeño pepper, seeds removed and finely chopped (optional, for some heat)
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Olive oil or cooking spray for greasing the baking dish
Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the shredded chicken, salsa verde, sour cream, half of the shredded cheese, black beans, frozen corn, diced red bell pepper, chopped jalapeño (if using), chopped cilantro, ground cumin, salt, and pepper. Mix everything together until well combined.
Grease a 9-inch round or square baking dish with olive oil or cooking spray.
Place a layer of corn tortillas at the bottom of the greased baking dish, covering the entire surface. You may need to cut some of the tortillas to fit them in the dish.
