Okonomiyaki
Okonomiyaki is a popular and savory Japanese pancake that is a delicious and versatile dish. The name "okonomiyaki" translates to "grilled as you like it," reflecting the customizable nature of this dish. It typically consists of a batter made from flour, grated yam or grated cabbage, and various fillings, such as meat, seafood, or vegetables. Okonomiyaki is often topped with a savory sauce, mayonnaise, bonito flakes, and dried seaweed.
Here's a basic recipe for making classic Okonomiyaki:
Ingredients:
For the batter:
- 1 cup all-purpose flour
- 1 cup water or dashi (Japanese soup stock)
- 1 egg
- 1 cup grated yamaimo (Japanese mountain yam) or finely shredded cabbage
- 1/2 teaspoon baking powder (optional, for a slightly fluffy texture)
- Salt and pepper to taste
For the fillings:
- 1 cup cooked shrimp, sliced squid, thinly sliced pork, or any other fillings of your choice (e.g., mushrooms, green onions, cheese, etc.)
For the toppings and sauce:
- Okonomiyaki sauce (store-bought or homemade by mixing equal parts ketchup, Worcestershire sauce, and soy sauce)
- Japanese mayonnaise (regular mayonnaise can be used as a substitute)
- Aonori (dried seaweed flakes)
- Katsuobushi (bonito flakes)
Instructions:
In a large bowl, combine the all-purpose flour, water or dashi, egg, grated yamaimo or shredded cabbage, baking powder (if using), and salt and pepper. Mix everything together until you have a smooth batter.
Add the fillings of your choice to the batter and mix until they are evenly distributed.
Preheat a griddle, non-stick skillet, or electric griddle over medium heat. Add a small amount of oil to the surface.
Pour a portion of the batter onto the heated surface, shaping it into a round pancake about 6 to 8 inches in diameter.
Cook the okonomiyaki for about 4-5 minutes on each side, or until both sides are golden brown and the inside is cooked through.
Once the okonomiyaki is cooked, transfer it to a plate.
Drizzle okonomiyaki sauce and Japanese mayonnaise over the top in a criss-cross pattern.
Sprinkle aonori (dried seaweed flakes) and katsuobushi (bonito flakes) on top.
Optionally, you can add pickled ginger for extra flavor.
Serve the Okonomiyaki while it's hot and enjoy the delicious blend of textures and flavors!
Okonomiyaki is a beloved dish in Japan, and it's also popular in many other countries. It's a fun and customizable meal that you can make with various fillings to suit your taste. Whether you enjoy it as a main dish or a savory snack, Okonomiyaki is sure to satisfy your cravings
