Austin-Style Migas
Austin-Style Migas is a Tex-Mex breakfast dish that originated in Austin, Texas. It's a delicious and hearty meal made with scrambled eggs, crispy tortilla strips, vegetables, and various toppings. Migas is a popular breakfast option in the southwestern United States, and each region has its own unique twist on the dish. Here's a recipe for making Austin-Style Migas:

Ingredients:

  • 4 large eggs
  • 2 tablespoons milk (or water)
  • 2 tablespoons vegetable oil
  • 2 corn tortillas, cut into thin strips
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers (any color you prefer)
  • 1 jalapeño pepper, seeded and finely chopped (optional, for added heat)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • Salt and black pepper to taste
  • Optional toppings: avocado slices, sour cream, salsa, lime wedges

Instructions:

  1. In a bowl, whisk together the eggs and milk (or water). Season with salt and black pepper. Set aside.

  2. In a large non-stick skillet, heat 1 tablespoon of vegetable oil over medium-high heat.

  1. Add the corn tortilla strips to the skillet and fry until they are golden and crispy, stirring occasionally. This will take about 3-4 minutes. Remove the tortilla strips from the skillet and set them aside.

  2. In the same skillet, add the remaining 1 tablespoon of vegetable oil.

  3. Sauté the diced onion, diced bell peppers, and chopped jalapeño pepper (if using) until they become tender and slightly caramelized.

  4. Add the diced tomatoes to the skillet and cook for another minute until they are heated through.

  5. Lower the heat to medium and pour the whisked eggs over the vegetable mixture in the skillet.

  6. Stir the eggs gently as they cook, allowing them to scramble and combine with the vegetables.

  7. Once the eggs are almost fully cooked, add the crispy tortilla strips to the skillet.

  8. Sprinkle the chopped cilantro and shredded cheese over the migas.

  9. Continue to cook the migas for a few more minutes until the cheese is melted, and the eggs are fully cooked.

  10. Taste the migas and adjust the seasoning with salt and black pepper if needed.

  11. Optionally, you can serve the migas with avocado slices, a dollop of sour cream, salsa, and lime wedges for added flavor and freshness.

  12. Serve the Austin-Style Migas hot and enjoy this hearty and flavorful Tex-Mex breakfast!

Austin-Style Migas is a delightful breakfast option that's full of texture and taste. It's a perfect way to start your day, and you can also enjoy it as a brunch or a satisfying breakfast-for-dinner dish.
