Crispy Gnocchi with Sausage and Sage Brown Butter

Ingredients:
- 1 lb (450g) store-bought or homemade potato gnocchi
- 8 oz (225g) Italian sausage, casings removed and crumbled
- 4 tablespoons unsalted butter
- 8-10 fresh sage leaves
- Salt and pepper to taste
- Grated Parmesan cheese, for serving (optional)
Instructions:
Cook the gnocchi according to the package instructions if using store-bought, or follow the instructions for homemade gnocchi until they float to the surface of boiling water. Drain the cooked gnocchi and set them asides.
In a large skillet or frying pan, cook the crumbled Italian sausage over medium-high heat until it's browned and cooked through. Use a slotted spoon to remove the cooked sausage from the pan, leaving the rendered fat in the pan.
In the same pan, melt the unsalted butter over medium heat. Once the butter starts to foam, add the fresh sage leaves to the pan.
Cook the butter and sage leaves for a few minutes until the butter turns a light golden brown color and the sage leaves become crispy. Be careful not to burn the butter.
Remove the sage leaves from the pan and set them aside.
Add the cooked gnocchi to the browned butter in the pan, spreading them out in a single layer.
Let the gnocchi cook without stirring for a few minutes until they develop a crispy golden crust. Then, flip them over and cook the other side to get crispy all over. This process may take about 5 minutes.
Once the gnocchi are crispy, add the cooked sausage back into the pan with the gnocchi. Toss everything together to combine.
Season the crispy gnocchi and sausage with salt and pepper to taste.
To serve, garnish the dish with the crispy sage leaves and, if desired, sprinkle some grated Parmesan cheese on top.
