Cornflake-crusted fish and chips is a delicious twist on the classic fish and chips recipe, where the fish is coated in a crispy and crunchy cornflake crust. It's a delightful combination of flavors and textures, making it a favorite among seafood lovers. Here's a simple recipe to make this mouthwatering dish:
Ingredients: For the Cornflake Crusted Fish:
- 1 lb (450g) white fish fillets (cod, haddock, or any firm white fish)
- 1 cup cornflakes, crushed
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon paprika
- Salt and pepper to taste
- Vegetable oil, for frying
For the Chips (French Fries):
- 4 large russet potatoes, peeled and cut into thick fries
- 2 tablespoons vegetable oil
- Salt to taste
Instructions: For the Cornflake Crusted Fish:
In a shallow dish, mix the crushed cornflakes, all-purpose flour, paprika, salt, and pepper.
In another shallow dish, whisk together the eggs and milk.
Dip each fish fillet first into the egg mixture, ensuring it's coated on all sides.
Then, dip the fish into the cornflake mixture, pressing the cornflakes onto the fish to create an even coating.
Place the coated fish fillets on a plate or a baking sheet.
In a large skillet or frying pan, heat about 1/2 inch of vegetable oil over medium-high heat.
Once the oil is hot, carefully add the coated fish fillets to the skillet.
Fry the fish for about 3-4 minutes on each side or until the crust turns golden brown and the fish is cooked through.
Remove the fish from the skillet and place it on a plate lined with paper towels to absorb any excess oil.
For the Chips (French Fries):
Preheat your oven to 425°F (220°C).
In a large mixing bowl, toss the peeled and cut potatoes with vegetable oil until they are evenly coated
Spread the potato fries in a single layer on a baking sheet lined with parchment paper.
Bake the fries in the preheated oven for about 25-30 minutes, or until they are crispy and golden brown, flipping them halfway through.
Remove the fries from the oven and sprinkle them with salt while they are still hot.
Serve the cornflake-crusted fish alongside the homemade chips (french fries), and you can also add a side of tartar sauce, lemon wedges, or malt vinegar for a classic fish and chips experience. Enjoy this delightful and crispy seafood dish
