Chipotle Chicken Fajit

Chipotle Chicken Fajitas are a flavorful and spicy twist on the classic fajitas, featuring tender and smoky chipotle-marinated chicken strips, sautéed peppers, and onions, all wrapped in warm tortillas. This dish is a crowd-pleaser and is perfect for a festive meal or a weeknight dinner. Here's how to make Chipotle Chicken Fajitas:

Ingredients:

For the Chipotle Chicken:

  • 3 tablespoons olive oil
  • 2 tablespoons adobo sauce from canned chipotle peppers (adjust to your spice preference)
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika (optional, for extra smokiness)
  • Salt and pepper to taste

For the Fajitas:

  • 1 large onion, thinly sliced
  • 1 large bell pepper (any color), thinly sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Flour or corn tortillas
  • Toppings: shredded cheese, guacamole, sour cream, salsa, chopped cilantro, lime wedges, etc.

Instructions:

For the Chipotle Chicken:

  1. In a bowl, whisk together the olive oil, adobo sauce, lime juice, minced garlic, ground cumin, chili powder, smoked paprika (if using), salt, and pepper.

  2. Add the sliced chicken to the bowl and toss it in the chipotle marinade, ensuring that all the chicken pieces are well coated. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes, or ideally, overnight for more intense flavor.

For the Fajitas:

  1. In a large skillet or a cast-iron pan, heat 1 tablespoon of olive oil over medium-high heat.

  2. Add the sliced onions and bell peppers to the skillet. Sauté them for about 5-7 minutes, or until they become tender and slightly caramelized. Season with salt and pepper to taste. Remove the sautéed vegetables from the skillet and set them aside.

  3. In the same skillet, cook the marinated chicken over medium-high heat. Cook for about 5-7 minutes or until the chicken is fully cooked through and slightly charred, stirring occasionally.

  4. Once the chicken is done, return the sautéed peppers and onions to the skillet. Toss everything together to combine the flavors.

  5. Warm the tortillas on a clean skillet or in the microwave until they are soft and pliable.

  6. To serve, place a spoonful of the chipotle chicken and vegetable mixture onto each tortilla.

  7. Add your favorite toppings, such as shredded cheese, guacamole, sour cream, salsa, chopped cilantro, and a squeeze of lime juice.

  8. Fold the tortillas over the filling to form fajitas and serve immediately.

Enjoy your delicious and spicy Chipotle Chicken Fajitas! They are sure to be a hit with your family and friends, and you can easily adjust the spice level to your liking by adding more or less adobo sauce. These fajitas are a fantastic option for a fun and flavorful Tex-Mex meal
