Ingredients for Birria:

  • 2 pounds (900g) beef chuck roast or beef brisket, cut into chunks
  • 2 dried ancho chilies
  • 2 dried guajillo chilies
  • 4 cloves garlic
  • 1 small onion, roughly chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 3 cups beef broth or water
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil (for searing the meat)

Ingredients for Serving:

  • Corn tortillas
  • Chopped onions
  • Chopped cilantro
  • Lime wedges
  • Consommé (cooking broth from the Birria)

Instructions:

  1. In a dry skillet over medium heat, lightly toast the dried ancho chilies and guajillo chilies for a minute or two until they become fragrant. Remove the stems and seeds from the chilies.


  2. In a blender or food processor, combine the toasted chilies, garlic, chopped onion, ground cumin, dried oregano, ground cinnamon, ground cloves, and a pinch of salt. Blend until you get a smooth paste. If needed, add a little water to help with blending.


  3. In a large bowl, place the chunks of beef and season them with salt and black pepper. Add the chili paste to the beef and mix everything well to coat the meat with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 2 hours or overnight for better flavor.


  4. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Sear the marinated beef in batches until it's browned on all sides. This will help to develop deeper flavors in the Birria.


  5. Pour the beef broth or water into the pot, making sure it covers the meat. Bring the liquid to a boil, then reduce the heat to low. Cover the pot and let the Birria simmer for about 3 to 4 hours or until the beef is tender and falls apart easily.


  6. Once the beef is cooked, shred it using two forks. You can also remove any large pieces of fat or bone at this point.


  7. To serve, warm the corn tortillas and fill each one with a generous amount of the shredded Birria beef. Top with chopped onions and cilantro. Squeeze some lime juice over the tacos.


  8. For an authentic touch, serve the Birria Tacos with a side of consommé, which is the flavorful cooking broth from the Birria. The consommé can be used for dipping the tacos or served in small cups alongside the tacos.
