Beef Stew Recipe

Ingredients:
- 2 pounds (900g) beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1/4 cup all-purpose flour
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional, you can replace with more beef broth if desired)
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 carrots, peeled and cut into chunks
- 3 potatoes, peeled and cut into chunks
- Salt and black pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
In a shallow dish or a large plastic bag, season the beef stew meat with salt and black pepper. Add the flour to the beef and toss it until the meat is evenly coated.
Working in batches, sear the beef in the hot oil until it's browned on all sides. This helps to lock in the flavors and creates a rich and caramelized base for the stew.
Remove the browned beef from the pot and set it aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant.
Pour in the beef broth and red wine (if using) and scrape any browned bits from the bottom of the pot to incorporate the flavors.
Stir in the tomato paste, bay leaves, dried thyme, and dried rosemary. Bring the mixture to a simmer.
Add the seared beef back to the pot along with any juices that may have accumulated.
Cover the pot and let the beef stew simmer on low heat for about 1.5 to 2 hours or until the beef becomes tender and the flavors meld together.
Add the carrot and potato chunks to the stew. Simmer for an additional 30 minutes or until the vegetables are cooked through.
Taste the stew and adjust the seasoning with more salt and black pepper if needed.
