Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cans (15 ounces each) white beans (such as cannellini beans), drained and rinsed (or use 4.5 cups cooked white beans)
- 4 cups vegetable broth (or use chicken broth if non-vegetarian)
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup chopped spinach or kale (optional, for added greens)
- Fresh parsley or chives, chopped, for garnish
Instructions:
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion, diced carrots, and diced celery to the pot. Sauté the vegetables for about 5 minutes or until they start to soften.
Stir in the minced garlic and cook for another minute until fragrant.
Add the drained and rinsed white beans to the pot. Stir to combine.
Pour in the vegetable broth and add the bay leaf, dried thyme, dried rosemary, salt, and pepper. Stir to combine all the ingredients.
Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes to allow the flavors to meld.
If desired, you can use an immersion blender to blend part of the soup to make it creamy while still leaving some beans and vegetables whole.
Add the chopped spinach or kale to the soup, if using. Stir and let it cook for a few minutes until the greens wilt.
Taste the soup and adjust the seasoning with more salt and pepper if needed.
Remove the bay leaf from the soup.
Ladle the White Bean Soup into bowls and garnish with fresh chopped parsley or chives.
