  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cans (15 ounces each) black beans, drained and rinsed (or use 4.5 cups cooked black beans)
  • 1 can (14 ounces) diced tomatoes (or use fresh tomatoes, diced)
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)
  • Shredded cheddar cheese or vegan cheese, for serving (optional)
  • Sour cream or Greek yogurt, for serving (optional)
  • Sliced green onions, for serving (optional)
  • Tortilla chips or cornbread, for serving (optional)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.

  2. Add the chopped onion, diced bell peppers, diced carrots, and diced celery to the pot. Sauté the vegetables for about 5 minutes or until they start to soften.

  3. Stir in the minced garlic and cook for another minute until fragrant.

  4. Add the drained and rinsed black beans, diced tomatoes (with their juice), and vegetable broth to the pot. Stir to combine.

  5. Add the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and pepper to the pot. Stir to combine all the ingredients.

  6. Bring the chili to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes to allow the flavors to meld and the chili to thicken.

  7. Taste the chili and adjust the seasoning with more salt, pepper, or spices if needed.

  8. Ladle the Black Bean Chili into bowls and garnish with fresh chopped cilantro if desired.

  9. Optionally, serve the chili with shredded cheddar cheese or vegan cheese on top.

  10. Add a dollop of sour cream or Greek yogurt, if you prefer.

  11. Sprinkle some sliced green onions over the chili for added freshness.

  12. Serve the chili with tortilla chips or cornbread on the side for a complete and satisfying meal.
