Instructions:
Preheat the oven to 375°F (190°C).
Cook the jumbo pasta shells according to the package instructions until they are al dente. Drain and set aside.

Spread a thin layer of tomato sauce in the bottom of a large baking dish.
Fill each cooked jumbo pasta shell with a spoonful of the cheese and spinach mixture. Place the filled shells in the baking dish in a single layer.
In a saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent.
Stir in the minced garlic and cook for another minute until fragrant.
Add the crushed tomatoes, diced tomatoes, dried oregano, dried basil, salt, and pepper to the saucepan. Stir to combine all the ingredients.
Let the tomato sauce simmer for about 10 minutes to allow the flavors to meld.
Pour the tomato sauce over the stuffed shells in the baking dish, covering them completely.
Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes or until the shells are heated through and the sauce is bubbly.
Optionally, remove the foil and sprinkle some additional shredded mozzarella or grated Parmesan cheese on top of the shells. Return the baking dish to the oven and bake for an additional 5-10 minutes until the cheese is melted and lightly golden.
