Raspberry Sorbet

Ingredients:
- 4 cups fresh or frozen raspberries

If you're using frozen raspberries, let them thaw at room temperature for a few minutes until they soften slightly.
In a small saucepan, combine the water and granulated sugar. Heat the mixture over medium heat, stirring until the sugar dissolves completely. This will create a simple syrup.
Remove the simple syrup from the heat and let it cool to room temperature.
In a blender or food processor, puree the raspberries until smooth.
Strain the raspberry puree through a fine-mesh sieve into a large mixing bowl, discarding the seeds. You can skip this step if you don't mind the seeds in your sorbet, but straining will result in a smoother texture.
Add the cooled simple syrup and freshly squeezed lemon juice to the raspberry puree. Stir until well combined.
