Mango Sticky Rice is a popular Thai dessert that combines the natural sweetness of ripe mangoes with the creamy, coconut-infused glutinous rice. It's a delightful and refreshing treat, especially during the mango season. Here's how you can make it:

Ingredients:

For the sticky rice:

  • 1 cup glutinous rice (also known as sweet rice)
  • 1 1/2 cups coconut milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt

For serving:

  • 2 ripe mangoes, peeled, pitted, and sliced
  • Toasted sesame seeds or mung beans for garnish (optional)

Instructions:

  1. Rinse the glutinous rice in cold water a few times until the water runs clear. Then, soak the rice in water for at least 4 hours or preferably overnight.


  2. After soaking, drain the rice and set it aside.


  3. Prepare a steamer. If you don't have a steamer, you can use a regular pot with a steamer basket or a bamboo steamer lined with cheesecloth.


  4. Add the soaked glutinous rice to the steamer and steam it over medium-high heat for about 25-30 minutes, or until the rice becomes tender and fully cooked.


  5. While the rice is steaming, prepare the coconut sauce. In a separate saucepan, combine the coconut milk, granulated sugar, and salt. Heat the mixture over medium heat, stirring until the sugar dissolves. Remove the saucepan from the heat and set the coconut sauce aside.

  6. Once the sticky rice is cooked, transfer it to a mixing bowl.


  7. Pour half of the coconut sauce over the cooked sticky rice and gently fold the sauce into the rice until well combined. Allow the rice to sit for about 15 minutes to absorb the flavors.


  8. To serve, place a portion of the coconut-infused sticky rice on a plate or in a bowl. Arrange the sliced ripe mangoes on the side or on top of the rice.


  9. Drizzle some of the remaining coconut sauce over the mango and sticky rice.


  10. Optional: Sprinkle toasted sesame seeds or mung beans on top for added texture and flavor.
