- 3 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Grated Parmesan cheese, for serving (optional)
- Fresh basil leaves, for garnish (optional)
Instructions:
Cook the cauliflower gnocchi according to the package instructions. If using homemade gnocchi, boil them in salted water until they float to the surface, then drain them
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Add the Italian sausage to the skillet, breaking it up with a spoon as it cooks. Cook the sausage until it is browned and fully cooked. Remove the cooked sausage from the skillet and set it aside.
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the halved cherry tomatoes to the skillet and sauté them for about 2-3 minutes until they start to soften.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the cooked cauliflower gnocchi to the skillet with the tomatoes and garlic. Toss everything together gently.
Return the cooked sausage to the skillet and mix it with the gnocchi and tomato mixture.
Drizzle the balsamic vinegar over the skillet and give everything a good stir.
Add the chopped fresh basil to the skillet and season with salt and pepper to taste. Stir to combine all the flavors.
Once everything is heated through and well combined, remove the skillet from the heat.
Serve the Cauliflower Gnocchi with Bruschetta Sauce and Sausage hot, garnished with grated Parmesan cheese and fresh basil leaves if desired.
