Broccoli pesto pasta is a delicious and nutritious dish that combines the flavors of traditional pesto with the goodness of broccoli. Here's a simple recipe to make this tasty meal:

Ingredients:

  • 12 ounces (340g) whole wheat or regular pasta of your choice
  • 2 cups broccoli florets
  • 1/3 cup toasted pine nuts or walnuts
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (or vegan alternative for a dairy-free version)
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Red pepper flakes (optional, for some heat)
  • Grated Parmesan cheese, for serving (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Blanch the Broccoli:

    • In the same pot or another saucepan, bring water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until they are bright green and slightly tender. Drain and set aside.
  3. Prepare the Pesto:

    • In a food processor, combine the blanched broccoli, toasted pine nuts (or walnuts), minced garlic, grated Parmesan cheese, and a pinch of salt and pepper.

    • Pulse the ingredients while drizzling in the extra-virgin olive oil gradually. Scrape down the sides of the food processor with a spatula as needed until you achieve a smooth and creamy consistency.

    • Taste the pesto and adjust seasoning, adding more salt, pepper, or lemon juice if desired. If you like it spicy, you can add some red pepper flakes.
  4. Combine the Pasta and Pesto:

    • In a large mixing bowl, toss the cooked pasta with the broccoli pesto until the pasta is well coated. If the pesto is too thick, you can add some of the reserved pasta water a little at a time until you reach your desired consistency.
  5. Serve:

    • Divide the broccoli pesto pasta among serving plates.
    • If desired, top with some additional grated Parmesan cheese and garnish with fresh basil leaves.
    • Serve immediately and enjoy your delicious broccoli pesto pasta!

This recipe can be easily customized to your liking. You can add cherry tomatoes, roasted red peppers, or grilled chicken for more flavor and variety. Enjoy your mea
