Stuffed Acorn Squash

Instructions:
Preheat your oven to 375°F (190°C).
Cut each acorn squash in half and scoop out the seeds and strings from the center using a spoon.
Place the acorn squash halves cut-side down on a baking sheet lined with parchment paper. Roast the squash in the preheated oven for about 25-30 minutes or until they become tender. The timing may vary depending on the size and ripeness of the squashes.
While the squash is roasting, prepare the stuffing. In a skillet, heat the olive oil over medium heat.
Add the chopped onion to the skillet and sauté until it becomes translucent.

Return the stuffed squash to the oven and bake for another 10-15 minutes or until the stuffing is heated through and any cheese on top is melted.
