Shakshuka
Shakshuka is a popular Middle Eastern and North African dish that features poached eggs in a rich and flavorful tomato-based sauce. Ingredients:
- 2 tablespoons olive oil
- 1 large onion, thinly sliced

- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika

- 1 can (28 oz) crushed tomatoes (or use fresh tomatoes, diced)
- Salt and black pepper to taste
- 4-6 large eggs

- Crumbled feta cheese or goat cheese (optional, for serving)
- Warm crusty bread or pita, for serving
Instructions:
In a large, oven-safe skillet or frying pan, heat the olive oil over medium heat.
Add the thinly sliced onions and bell peppers to the skillet. Sauté until they become soft and slightly caramelized, about 5-7 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Add the ground cumin, ground paprika, ground cayenne pepper, and ground coriander (if using) to the skillet. Mix everything together until the vegetables are coated with the spices.
Pour the crushed tomatoes into the skillet. Stir everything together, and season with salt and black pepper to taste.
Let the tomato sauce simmer for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Using the back of a spoon, create small wells in the tomato sauce.
Crack the eggs, one at a time, into the wells in the tomato sauce.
Cover the skillet with a lid or foil, and let the eggs poach in the tomato sauce for about 5-7 minutes, or until the egg whites are set but the yolks are still slightly runny.
Once the eggs are cooked to your desired level of doneness, remove the skillet from the heat.
Garnish the Shakshuka with chopped fresh parsley or cilantro.
Optionally, sprinkle crumbled feta cheese or goat cheese over the Shakshuka for added creaminess and tangy flavor.
Serve the Shakshuka hot, directly from the skillet, with warm crusty bread or pita on the side.
