Pasta Primavera

Pasta Primavera is a classic Italian pasta dish that celebrates the fresh flavors of spring vegetables. The name "Primavera" means "spring" in Italian, and this dish typically features a variety of colorful vegetables in a light and creamy sauce. Here's a recipe for making Pasta Primavera:

Ingredients:

  • 12 ounces (340g) pasta of your choice (linguine, fettuccine, or penne work well)
  • 2 tablespoons olive oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers (any color you prefer)
  • 1 cup sliced zucchini or yellow squash
  • 1 cup heavy cream (or use half-and-half for a lighter option)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil or parsley
  • Salt and black pepper to taste
  • Crushed red pepper flakes (optional, for added spice)

Instructions:

  1. Cook the pasta according to the package instructions until it's al dente. Drain and set it aside.

  2. In a large skillet, heat the olive oil over medium heat.

  3. Add the sliced onion to the skillet and sauté until it becomes translucent.

  4. Stir in the minced garlic and cook for another minute until fragrant.

  5. Add the halved cherry tomatoes, broccoli florets, sliced bell peppers, and sliced zucchini to the skillet. Sauté the vegetables for about 5-7 minutes until they are tender-crisp.

  6. Pour the heavy cream (or half-and-half) into the skillet and bring it to a simmer.

  7. Lower the heat to medium-low and let the sauce simmer for a few minutes until it thickens slightly.

  8. Stir in the grated Parmesan cheese until the sauce is creamy and smooth.

  9. Season the sauce with salt and black pepper to taste. If you like it spicy, add some crushed red pepper flakes.

  10. Add the cooked pasta to the skillet with the creamy vegetable sauce. Toss until the pasta is well coated with the sauce and vegetables.

  11. Optionally, you can garnish the Pasta Primavera with chopped fresh basil or parsley for added freshness and serve immediately.

Pasta Primavera is a delicious and vibrant dish that's perfect for celebrating the flavors of spring or any time you crave a light and creamy pasta. Feel free to customize the vegetables with your favorite spring produce, such as asparagus, peas, or baby spinach. Enjoy this colorful and wholesome pasta recipe with the beauty of seasonal vegetables!
