Mississippi Mud Cake

Mississippi Mud Cake is a rich and decadent chocolate dessert that originated in the Southern United States. It typically consists of a moist chocolate cake topped with marshmallows and a rich chocolate frosting, creating a dessert reminiscent of the muddy banks of the Mississippi River. Here's a classic recipe for Mississippi Mud Cake:

Ingredients:

For the cake:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped pecans or walnuts (optional)
  • 2 cups mini marshmallows

For the frosting:

  • 1/2 cup (1 stick) unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.

  2. In a large mixing bowl, whisk together the melted butter, granulated sugar, and cocoa powder until well combined.

  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Gradually add the all-purpose flour and salt to the wet ingredients, mixing just until the flour is incorporated. If you're using nuts, fold them into the batter at this point.

  5. Pour the cake batter into the prepared baking dish and spread it out evenly.

  6. Bake the cake in the preheated oven for about 25 to 30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

  7. Remove the cake from the oven and immediately sprinkle the mini marshmallows evenly over the hot cake.

  8. Return the cake to the oven for an additional 2 to 3 minutes, just until the marshmallows begin to puff and melt. Be careful not to overcook them.

  9. While the cake is cooling, prepare the frosting. In a medium saucepan, melt the butter over medium heat. Stir in the cocoa powder and milk until smooth.

  10. Remove the saucepan from the heat and add the vanilla extract and powdered sugar. Stir until the frosting is thick and smooth.

  11. Pour the warm frosting over the marshmallow-topped cake, spreading it out to cover the entire surface.

  12. Allow the Mississippi Mud Cake to cool completely before serving.

This cake is best enjoyed at room temperature or slightly warmed. The combination of moist cake, gooey marshmallows, and rich chocolate frosting makes it an irresistible treat for chocolate lovers. Serve it as is, or top it with some extra chopped nuts or even a scoop of vanilla ice cream for an extra indulgence. Enjoy
