Healthy Breakfast Cookies
Ingredients:
- 2 ripe bananas, mashed
- 1/4 cup natural peanut butter or almond butter (no added sugar or oil)
- 1/4 cup honey or maple syrup (adjust according to your desired level of sweetness)
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats
- 1/2 cup whole wheat flour or almond flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- A pinch of salt
- Optional add-ins: Chopped nuts, dried fruits, chia seeds, flaxseeds, shredded coconut, dark chocolate chips
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix the mashed bananas, peanut butter, honey or maple syrup, applesauce, and vanilla extract until well combined.
In a separate bowl, whisk together the rolled oats, whole wheat flour (or almond flour), baking powder, ground cinnamon, and a pinch of salt.
Combine the wet and dry ingredients and mix until everything is well incorporated. If desired, add any optional add-ins for extra flavor and texture.
Scoop tablespoonfuls of the cookie dough onto the prepared baking sheet, leaving some space between each cookie.
Flatten each cookie slightly with the back of a spoon or your fingers to shape them.
Bake the cookies in the preheated oven for about 12-15 minutes or until they turn golden brown around the edges.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
These healthy breakfast cookies can be stored in an airtight container for a few days, making them a convenient and wholesome option for breakfast or snacks.
