Creamy Wild Rice Soup
Creamy Wild Rice Soup is a hearty and comforting soup made with wild rice, vegetables, and a creamy broth. It's a popular dish in some regions, especially in the upper Midwest of the United States, where wild rice is abundant. Here's a basic recipe to make this delicious soup:
Ingredients:
- 1 cup uncooked wild rice
- 4 cups vegetable or chicken broth
- 2 cups water
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 2 cloves garlic, minced
- 1/4 cup butter
- 1/3 cup all-purpose flour
- 2 cups milk (whole or 2% milk for creaminess)
- 1 cup half-and-half or heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
Rinse the wild rice under cold running water and drain it.
In a large pot, combine the wild rice, vegetable or chicken broth, and water. Bring it to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 40-45 minutes or until the rice is tender.
In a separate pan, melt the butter over medium heat. Add the diced carrots, celery, onion, and minced garlic. Sauté the vegetables until they become soft and slightly browned.
Add the sautéed vegetables to the cooked wild rice and stir to combine.
In the same pan used for sautéing the vegetables, add the flour and cook it for a minute or two to remove the raw taste.
Slowly pour in the milk while stirring constantly to avoid lumps. Then add the half-and-half or heavy cream.
Cook the mixture, stirring frequently, until it thickens and becomes creamy.
Pour the creamy mixture into the pot with the wild rice and vegetables. Stir everything together to combine.
Simmer the soup for an additional 10-15 minutes to let the flavors meld together.
Season the soup with salt and pepper according to your taste preference.
Serve the creamy wild rice soup hot and garnish with fresh parsley if desired.
This creamy wild rice soup is not only delicious but also quite filling and comforting, perfect for cold days or when you want a hearty, homemade meal. Enjoy it as a main course or serve it with a side salad or some crusty bread for a satisfying meal
