Collard Green Wraps
Collard green wraps are a healthy and gluten-free alternative to traditional wraps. They provide a sturdy and nutritious base for a variety of fillings. Here's a simple and delicious collard green wrap recipe:

Ingredients:

  • Large collard green leaves (one per wrap)
  • 1 cup cooked quinoa or brown rice
  • 1 cup cooked chickpeas or your choice of protein (e.g., grilled chicken, tofu, black beans)
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (red, yellow, or green)
  • 1 avocado, sliced
  • 1/4 cup hummus or your favorite sauce
  • Fresh herbs (e.g., cilantro or basil) for added flavor (optional)
  • Salt and pepper to taste

Instructions:

  1. Wash the collard green leaves thoroughly and pat them dry with a paper towel.

  2. Carefully trim the tough stem from the bottom of each leaf to make it easier to roll.

  3. Blanch the collard green leaves in boiling water for about 30 seconds to soften them slightly

  4. Then, immediately transfer them to an ice-cold water bath to stop the cooking process. This step will make the leaves more pliable and easier to work with.

  5. Lay the blanched collard green leaf flat on a clean surface, with the stem side facing up and the leafy side down.

  6. In the center of the leaf, place a layer of cooked quinoa or brown rice, followed by your choice of protein (chickpeas, chicken, tofu, or black beans).

  7. Add shredded carrots, sliced bell peppers, avocado slices, and any fresh herbs you'd like to include.

  8. Season the fillings with salt and pepper to taste.

  9. Drizzle a spoonful of hummus or your preferred sauce over the fillings to add flavor and moisture.

  10. Carefully fold in the sides of the collard green leaf and then roll it up tightly, similar to how you would make a burrito or wrap.

  11. Slice the collard green wrap in half or leave it whole, and enjoy your nutritious and tasty collard green wrap!

These wraps are not only packed with nutrients but also refreshing and satisfying. Feel free to customize the fillings based on your preferences, and you can even use other leafy greens like kale or Swiss chard if you prefer. Enjoy your collard green wraps as a healthy and delicious meal or snack
