Instructions:
Cook the soba noodles according to the package instructions until they are al dente. Drain the noodles and rinse them under cold water to stop the cooking process and prevent them from sticking together. Set aside.
In a small bowl, whisk together the soy sauce, rice vinegar, toasted sesame oil, maple syrup (or honey), grated ginger, and minced garlic to create the dressing.
