Veggie Wrap: Fill a whole wheat tortilla with hummus, shredded carrots, sliced cucumber, bell peppers, spinach, and feta cheese. Roll it up and enjoy!

Veggie Wrap

Ingredients:

  • 1 large whole wheat tortilla or wrap
  • 2-3 tablespoons hummus (flavor of your choice)
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/2 cup thinly sliced bell peppers (assorted colors)
  • 1/2 cup baby spinach or mixed greens
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and pepper, to taste

Instructions:

  1. Lay the whole wheat tortilla on a clean surface, such as a cutting board or a plate.

  2. Spread the hummus evenly over the entire surface of the tortilla.


  3. Arrange the shredded carrots, sliced cucumber, bell peppers, and baby spinach (or mixed greens) in the center of the tortilla, leaving some space around the edges to make it easier to roll.


  4. If you're using feta cheese, sprinkle it over the veggies.

  5. Season the veggies with a pinch of salt and pepper to taste.


  6. To wrap the ingredients, first fold in the sides of the tortilla. Then, starting from the bottom, tightly roll the tortilla upwards, enclosing the filling completely.


  7. Once the wrap is rolled, you can either slice it in half diagonally to create two portions or leave it whole if you prefer.


  8. Serve immediately, or you can wrap it in foil or parchment paper to take it on the go.

Feel free to customize the recipe by adding other vegetables, such as avocado, sprouts, or red onion, and incorporating your favorite sauces or dressings for extra flavor. Enjoy your Veggie Wrap!
