Vegan quesadillas are a delightful and cruelty-free twist on the classic quesadilla, which typically contains cheese and often meat. The vegan version uses plant-based ingredients to create a similarly delicious and satisfying dish. Here's a simple recipe for you:

Ingredients:

For the filling:

  • 1 cup cooked black beans (canned or cooked from dry)
  • 1 cup diced vegetables (bell peppers, onions, zucchini, mushrooms, etc.)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional add-ins: corn, chopped spinach, or diced tomatoes

For the vegan cheese:

  • 1 cup raw cashews (soaked in water for at least 4 hours or overnight)
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1 cup water

For assembling:

  • 4-6 medium-sized flour tortillas (you can use whole wheat or gluten-free tortillas if preferred)
  • Vegan butter or margarine for brushing (optional)

Instructions:

  1. Prepare the vegan cheese: Drain and rinse the soaked cashews. In a blender or food processor, combine the cashews, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and water. Blend until smooth and creamy. Adjust the consistency by adding more water if needed. Set aside.


  2. In a skillet, heat the olive oil over medium-high heat. Add the diced vegetables and cook until they become tender, about 5-7 minutes.


  3. Add the cooked black beans to the skillet along with ground cumin, chili powder, salt, and pepper. Stir well to combine and cook for another 2-3 minutes. If you're adding any optional ingredients like corn or spinach, add them now.


  4. Preheat a separate non-stick skillet or griddle over medium heat.


  5. Take one flour tortilla and spread a thin layer of the prepared vegan cheese on one-half of the tortilla.


  6. Spoon some of the cooked vegetable and black bean filling over the cheese-covered half.

  7. Fold the tortilla in half, pressing it down gently to seal the edges.


  8. If desired, brush the outside of the folded quesadilla with vegan butter or margarine for a crispier texture.


  9. Place the assembled quesadilla onto the preheated skillet or griddle and cook for 2-3 minutes on each side, or until it becomes golden brown and crispy.


  10. Remove the quesadilla from the skillet and let it cool for a moment before slicing it into wedges.


  11. Serve your vegan quesadilla with guacamole, salsa, or your favorite vegan dipping sauce.
