Thai Green Papaya Salad

Here's a basic recipe for Thai Green Papaya Salad
Ingredients:
- 1 medium green papaya (about 1 pound), peeled and shredded
- 1 cup cherry tomatoes, halved
- 1/2 cup long green beans, cut into 1-inch pieces
- 2-3 cloves garlic, minced
- 2-3 Thai bird's eye chilies, finely chopped (adjust the amount according to your spice preference)
- 2 tablespoons roasted peanuts, coarsely crushed
- 2 tablespoons dried shrimp (optional, omit for a vegetarian version)
- 2 tablespoons fish sauce (or soy sauce for a vegetarian version)
- 2 tablespoons fresh lime juice
- 1 tablespoon palm sugar or brown sugar
- 1 tablespoon tamarind paste
- Lime wedges, for serving
- Fresh cilantro leaves, for garnish
Instructions:
Peel the green papaya using a vegetable peeler or a knife. Cut the papaya in half and remove the seeds. Shred the papaya using a grater or a mandoline slicer. Alternatively, you can use a julienne peeler to achieve thin strips.
In a large mortar and pestle, lightly pound the minced garlic and chopped Thai chilies to release their flavors. If you don't have a mortar and pestle, you can also use a small bowl and the back of a spoon.
Add the green beans to the mortar and lightly pound them to bruise them slightly. This helps the green beans absorb the dressing.
Add the halved cherry tomatoes, shredded green papaya, crushed peanuts, and dried shrimp (if using) to the mortar. Gently mix and lightly pound everything together to combine the flavors.
In a separate small bowl, prepare the dressing by mixing the fish sauce, fresh lime juice, palm sugar or brown sugar, and tamarind paste until the sugar is dissolved.
Pour the dressing over the papaya mixture in the mortar and continue to lightly pound and mix everything together to ensure the dressing is evenly distributed.
Taste the salad and adjust the flavors as needed, adding more fish sauce for saltiness, lime juice for sourness, or sugar for sweetness.
Transfer the Thai Green Papaya Salad to a serving plate and garnish with fresh cilantro leaves.
Serve the salad immediately with lime wedges on the side.
