Ingredients:

  • 1 pound ground beef or ground turkey

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (14.5 ounces) diced tomatoes (with their juices)
  • 1 can (10 ounces) diced tomatoes and green chilies (such as Rotel)
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups beef broth or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, sliced green onions, crushed tortilla chips, or lime wedges

Instructions:

  1. In a large pot or Dutch oven, cook the ground beef or ground turkey over medium-high heat, breaking it up with a spoon as it cooks.


  2. Once the meat is cooked through and browned, drain any excess fat.


  3. Add the diced onion and minced garlic to the pot with the cooked meat. Sauté for a few minutes until the onion becomes translucent and the garlic is fragrant.


  4. Stir in the black beans, kidney beans, pinto beans, corn, diced tomatoes, diced tomatoes and green chilies, and taco seasoning mix.


  5. Pour in the beef broth or chicken broth and bring the soup to a simmer.


  6. Let the Taco Soup cook for about 15-20 minutes, allowing the flavors to meld together.

  7. Taste the soup and season with salt and pepper as needed. Adjust the seasoning according to your preference.
