Sheet Pan Quesadilla with Jalapeño Ranch

Sheet Pan Quesadilla with Jalapeño Ranch is a fun and flavorful twist on the classic quesadilla. It involves layering tortillas with a variety of fillings, then baking them in the oven on a sheet pan until the cheese is melted and the tortillas are crispy. The quesadillas are served with a zesty and creamy jalapeño ranch sauce for dipping. Here's a delicious recipe to try:

Ingredients for Quesadilla:

  • 8 medium-sized flour tortillas
  • 2 cups cooked and shredded chicken (rotisserie chicken works well)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Cooking spray or olive oil

Ingredients for Jalapeño Ranch Sauce:

  • 1 cup mayonnaise
  • 1/2 cup buttermilk
  • 1 jalapeño pepper, seeds removed (use more or less depending on your desired heat level)
  • 1 clove garlic
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).

  2. In a blender or food processor, combine all the ingredients for the Jalapeño Ranch Sauce - mayonnaise, buttermilk, jalapeño pepper, garlic, cilantro, lime juice, dried dill, salt, and pepper. Blend until smooth and creamy. Taste and adjust seasoning as needed. Transfer the sauce to a serving bowl and refrigerate until ready to use.

  3. In a large bowl, mix the shredded chicken, diced red and green bell peppers, diced red onion, chopped cilantro, salt, and pepper.

  4. Lay four tortillas on a baking sheet. Sprinkle a layer of both shredded cheeses evenly over each tortilla.

  5. Divide the chicken and vegetable mixture equally among the four tortillas, spreading it evenly over the cheese.

  6. Top each with another tortilla to form a quesadilla "sandwich."

  7. Lightly spray the top of each quesadilla with cooking spray or brush with olive oil. This will help them become crispy in the oven.

  8. Bake the quesadillas in the preheated oven for about 10-12 minutes, or until the cheese is melted, and the tortillas are golden and crispy.

  9. Remove the sheet pan quesadillas from the oven and let them cool for a minute or two.

  10. Cut each quesadilla into quarters and serve them warm with the chilled Jalapeño Ranch Sauce for dipping.

Sheet Pan Quesadilla with Jalapeño Ranch is a fantastic appetizer or main dish for a casual gathering or family dinner. Enjoy the cheesy goodness and the zing of the creamy jalapeño ranch dip
