  • 1 zucchini, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 can (14 ounces) diced tomatoes (or use fresh tomatoes, diced)
  • 6 cups vegetable broth (or use vegetable stock or water)
  • 1 can (14 ounces) cannellini beans or kidney beans, drained and rinsed
  • 1 cup small pasta (e.g., elbow macaroni or small shells) or rice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley or basil, chopped, for garnish
  • Grated Parmesan cheese or vegan cheese (optional, for serving)

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.


  2. Add the chopped onion and sauté for about 2-3 minutes until it becomes translucent.

  3. Add the minced garlic and sauté for another minute until fragrant.


  4. Add the diced carrots, celery, zucchini, and green beans to the pot. Cook the vegetables for about 5 minutes, stirring occasionally.
