Mediterranean Quinoa Salad
Mediterranean Quinoa Salad is a delightful and nutritious dish that combines the flavors of the Mediterranean region with the goodness of quinoa. It's a perfect option for a healthy lunch, a refreshing side dish, or even a light dinner. This salad typically includes a variety of fresh vegetables, herbs, olives, and a tangy dressing.
Here's a basic recipe for a Mediterranean Quinoa Salad:
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup crumbled feta cheese (optional, omit for a vegan version)
- Juice of 1 lemon
- 3 tablespoons extra-virgin olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
Rinse the quinoa thoroughly under cold water to remove any bitter residue.
In a medium saucepan, bring the 2 cups of water or vegetable broth to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and let it simmer for about 15-20 minutes or until the quinoa is cooked and the water is absorbed. Once cooked, fluff the quinoa with a fork and let it cool to room temperature.
In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, parsley, and mint.
In a separate small bowl, whisk together the lemon juice, extra-virgin olive oil, minced garlic, salt, and pepper to make the dressing.
Pour the dressing over the quinoa and vegetables, tossing everything together to ensure it's evenly coated.
If using feta cheese, gently fold it into the salad.
Taste and adjust seasoning as needed.
Cover the bowl and refrigerate the salad for at least 30 minutes to let the flavors meld together.
When ready to serve, give the salad a final toss and garnish with some extra chopped herbs if desired.
Enjoy your refreshing and nutritious Mediterranean Quinoa Salad! You can customize this recipe by adding other Mediterranean ingredients like artichoke hearts, sun-dried tomatoes, or roasted red peppers. It's a versatile dish that can be served on its own or as a side to grilled meats or fish
