  • 1 tablespoon olive oil

  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (or use fresh tomatoes)
  • 6 cups vegetable broth or water
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté for about 5 minutes until the vegetables begin to soften.


  2. Add the minced garlic to the pot and cook for an additional 1-2 minutes, stirring frequently, until fragrant.


  3. Pour in the vegetable broth (or water) and add the rinsed lentils, diced tomatoes, dried thyme, and bay leaf to the pot. Stir well to combine all the ingredients.
