Ingredients for the Chicken Satay:

- Bamboo skewers (pre-soaked in water for at least 30 minutes to prevent burning)
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional, but adds extra depth of flavor)
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- Juice of 1 lime
Ingredients for the Peanut Sauce:
- 1/2 cup creamy peanut butter
- 1/4 cup coconut milk
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 1 teaspoon Sriracha or chili sauce (adjust to your preferred level of spiciness)
- Water (as needed to adjust the consistency)
Instructions:
In a bowl, combine the vegetable oil, soy sauce, fish sauce (if using), curry powder, turmeric, coriander, cumin, brown sugar, minced garlic, grated ginger, and lime juice to make the marinade.
Add the chicken strips or cubes to the marinade, ensuring they are well coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 1 hour (or ideally, overnight) to allow the flavors to develop.
While the chicken is marinating, prepare the peanut sauce. In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, and Sriracha until smooth.
