Cheesecake
Cheesecake is a rich and creamy dessert made with a base of crushed cookies or graham crackers and a luscious cream cheese filling. It can be served plain or with various toppings such as fruit compotes, chocolate, or caramel sauce. Here's a classic recipe for a delicious New York-style cheesecake:
Ingredients:
For the crust:
- 1 1/2 cups graham cracker crumbs (or crushed digestive biscuits)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the filling:
- 4 (8-ounce) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
Instructions:
Preheat your oven to 325°F (160°C). Grease a 9-inch (23 cm) springform pan with butter or cooking spray.
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter for the crust. Mix until the crumbs are evenly coated with butter.
Press the crumb mixture firmly and evenly into the bottom of the prepared springform pan. Use the back of a spoon or the bottom of a glass to help compact the crust.
In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until smooth and creamy.
Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
Stir in the sour cream and heavy cream until the filling is well combined and creamy.
Pour the cream cheese filling over the prepared crust in the springform pan.
Tap the pan gently on the counter a few times to remove any air bubbles from the filling.
Bake the cheesecake in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until the edges are set, and the center is slightly jiggly.
Turn off the oven, crack the oven door slightly, and let the cheesecake cool in the oven for about 1 hour.
Remove the cheesecake from the oven and let it cool completely at room temperature.
Once cooled, cover the cheesecake with plastic wrap and refrigerate it for at least 4 hours or preferably overnight to set and chill.
Serving:
Before serving, you can top the cheesecake with your favorite fruit compote, chocolate ganache, caramel sauce, or fresh fruit. Some popular choices are cherry, blueberry, or strawberry toppings.
To serve, carefully remove the sides of the springform pan, slice the cheesecake into wedges, and enjoy this creamy and decadent dessert!
