Ingredients:

For the Adzuki Beans:

  • 1 cup dried adzuki beans
  • 3 cups water (for soaking)
  • 4 cups water (for cooking)
  • 1 bay leaf
  • 1/2 teaspoon salt

For the Bowls:

  • Cooked brown rice or quinoa (or your preferred grain)
  • Sautéed vegetables (such as broccoli, bell peppers, carrots, and spinach)
  • Avocado slices or guacamole
  • Quick-pickled red onions (optional)
  • Sesame seeds or chopped green onions for garnish

For the Dressing (Tahini-Soy Dressing):

  • 1/4 cup tahini (sesame seed paste)
  • 2 tablespoons soy sauce or tamari (for a gluten-free option)
  • 2 tablespoons water
  • 1 tablespoon maple syrup or agave nectar
  • 1 clove garlic, minced
  • Juice of 1 lime or lemon

Instructions:

  1. Rinse the dried adzuki beans under cold water. Then, place them in a large bowl and cover with 3 cups of water. Let the beans soak overnight or for at least 8 hours. Soaking helps to reduce cooking time and makes the beans easier to digest.


  2. After soaking, drain and rinse the adzuki beans again. Transfer them to a pot, add 4 cups of water, and bring to a boil.


  3. Once the water is boiling, reduce the heat to a simmer and add a bay leaf. Cook the beans for about 30-40 minutes or until they are tender but not mushy. Add 1/2 teaspoon of salt towards the end of cooking. Drain any excess water and set the cooked adzuki beans aside.

  4. While the adzuki beans are cooking, prepare your preferred grain (brown rice, quinoa, etc.) according to the package instructions.


  5. In a separate pan, sauté your favorite vegetables with a bit of olive oil or vegetable broth until they are tender-crisp.


  6. To make the tahini-soy dressing, whisk together tahini, soy sauce, water, maple syrup, minced garlic, and lime or lemon juice in a small bowl until well combined.


  7. Assemble your adzuki bean bowls by starting with a base of cooked brown rice or quinoa.

  8. Add a generous serving of cooked adzuki beans and sautéed vegetables.


  9. Top the bowls with avocado slices or guacamole and some quick-pickled red onions if desired.


  10. Drizzle the tahini-soy dressing over the bowls.


  11. Garnish with sesame seeds or chopped green onions for extra flavor and a pop of color.
